What's for Dinner Tonight?

Tonight we are having a family favorite. "Double Barf Chicken" which is a name given to this dish by Melen when she was young.

Basically just baked chicken, over a bed of cauliflower casserole. The casserole part is pretty simple, cauliflower that is diced up, mushrooms, garlic, some parmesan and some Italian seasoning.

No proper meal for me.

I had some re-warmed pot roast in a mug before going to fencing tonight (normally I don't go on Friday nights but I wanted to meet up with some kids that I need to get to our 'invitation only' practice. After I got home (about 7:45pm) I had a leftover piece of fried chicken and some Makers Mark.

Your meal looks better.
 
1" thick Pork Chops, Mashed Potatoes, & Corn on the cob.
Later, for sunset, Coffee and a sweet Reisling on the re-freshened patio.
 
Chicago’s Chinatown for an amazing spread of Dim Sum. So good!

So many leftover!s, none will go to waste
 
I made whole chicken wings in my air fryer in two batches of 4 since it's not a big air fryer.
I'm loving the sweet corn this year!
A friend mentioned seasoning the corn with Old Bay, so I did.

Yesterday I made a roast in the crock pot with Lipton onion soup, beef broth and mushrooms.
Today it's leftover shredded beef on a Keto bun with olive oil mayo, onion and Birds Eye crispy green beans made in the air fryer.

... and yes, I'm a plate freak.
I have probably 20 different ones in various patterns from various places lol

I think you never have the same plate under your food, probably just like us we have a mignary of plates for the last 50 years except for our pfaltzgraff dishes that only see the light of day 3 or 4 times a year

Chinese carry out. 3 mains; 2 beef, 1 pork. 2 appetizers. House fried rice. Won Ton & Egg Drop soup. Lots of fortune cookies.
 
Recently my son Ty smoked a pork butt, then shredded it for sandwiches etc.
He added a mix of two types of bbq sauce.
I had it on a bun yesterday.
Today I put it over mac and cheese, the way my Grandbugs enjoy it.
Had a mixed greens salad with walnuts and feta also.
Yumz!

My mom used to make something we lovingly called KETCHUP STEAK

It was Round Steak, a diced onion, a few sliced potatoes, an entire bottle of ketchup, and then about 1/2 of a bottle of water. All cooked for hours, sometimes in the oven, sometimes in a covered pot. It always tasted better the 2nd day, so she made a lot and we looked forward to the leftovers more than the meal served the first day. I think the tough 'Round Steak' softened up the 2nd day after sitting in the ketchup juice overnight?

I'm making a low carb variation and switching to Chuck Roast because I like it better than Round Steak.

2.5# of chuck roast
1 bottle of (RedGold) ketchup
a few ounces of chopped mushrooms
I also swapped a can of RedGold diced tomatoes with garlic and basil for the 1/2 bottle of water that my mom used. So no ketchup water was added.

I wanted more tomatoes, the acid from the tomatoes and ketchup seems to break down the chewy chuck roast into something more tender. Mushrooms replace the potatoes, but cauliflower is also a good potato substitute.

The whole thing is in a cast iron roaster and in the oven for a few hours at 325 (F) degrees. It is covered and cooking now, and the whole house smells great. I'll take the cover off for the last 30 minutes or so.
