Things to see/do in Alabama and FL panhandle?

We're planning a trip through Alabama and northern Florida.
Any recommendations?

Here is our tentative itinerary. It looks like mostly Interstate highways. Is it worth it to take the back roads for any/all of the trip (time permitting).
Fly into Destin FL
1 night in Birmingham
2 nights in Huntsville
2 nights somewhere along the beaches on the Gulf.

The submarine USS Drum is there also. Also there are inside and outside exhibits of aircraft, missiles, tanks, etc.

Much of this trip will be focused on military exhibits. The Mrs. isn't into it but I'll give her some beach time near the end.

I’ve done a similar trip, and it’s awesome! Destin is beautiful—beach time there is a must. In Birmingham, check out the Civil Rights Institute. Huntsville’s Space & Rocket Center is definitely worth a visit. For the Gulf, I recommend some scenic back roads if you have time—they offer great views.
