OK , my brother in-law is coming up from canberra for the weekend and has put in an order for roast pheasant for dinner Saturday night . The problem is that there aren't any about so I've had to look at other alternatives . Now that the weathers turned cool the rats (big hooers of black rats) are coming out of the scrub and I figured I could use a few rats in the pheasant's place . Of course it would involve a bit of creativity in the stuffing and arranging department and quite a bit of garnishing on the plate but I am struck with this huge moral dilema - should I use a cream or tomato based sauce ?
