My brother in-law wants pheasant ....

OK , my brother in-law is coming up from canberra for the weekend and has put in an order for roast pheasant for dinner Saturday night . The problem is that there aren't any about so I've had to look at other alternatives . Now that the weathers turned cool the rats (big hooers of black rats) are coming out of the scrub and I figured I could use a few rats in the pheasant's place . Of course it would involve a bit of creativity in the stuffing and arranging department and quite a bit of garnishing on the plate but I am struck with this huge moral dilema - should I use a cream or tomato based sauce ? :chicken:
 
soak the carcass in beer or milk overnight in the fridge - that'll clear up a lot of the gamey taste. and i definitely agree on the cream based sauce -- campbells cream of onion would be a good start. ;)
 
Any zoos near by featuring local fauna....like pheasant? :rolleyes:


Not really , I could try shooting a few magpies or crows and fob them off as pheasants but only South Australians eat them . Could also try a few galah's as well but the recipe for them doesn't sound too appetising (put a couple of galah's in a pot with water and a stone , when the stones soft throw out the galah's and water and eat the stone ...) , might do at a pinch though . The rat idea will be easier as they are already around the area .
