Eggs in a Basket

2 slices of hearty bread (sour dough, multi-grain, Italian...whatever makes you happy)
2 eggs
butter (about 2 Tablespoons)

Cut a hole in the center of each slice of bread that is large enough to hold an egg. Don't throw away the centers of the bread.

Melt the butter in a large non-stick pan. Dredge both sides of the bread, including the centers in the butter.

Grill the bread in the non-stick pan on the first side just until the bread begins to brown.

Turn the heat down to low, add an egg to the center of each slice of bread and continue cooking until the bread has browned and the eggs are firm on the bottom.

Flip and continue cooking over low heat until the bread has browned and the whites of the eggs are firm but the yolk is still runny.

Grill the centers of the bread on both sides and serve on the side with your favorite jelly!

It wouldn't be as good as fresh from the oven.

You can make some Peeps...it's not hard...besides, you are very talented in the kitchen.
 
Since you never mentioned the BACON in your ingredients list we must conclude this was another visual tease.:hammer: The only thing better than those is when you go out to the hen house and get the eggs fresh each morning. Might have to try them tomorrow.:clap:

There are hell points for teasing.:whistling: Going to be hard to have ham and green beans with potatoes for supper now. But it sure smells good in the slow cooker. I have not had fried chicken in ages. We have a place in Elmira called Curly's chicken shack that does chicken that is fabulous. My doc appointments are too early in the day or I would stop there on my way to the cancer center Monday.

beautiful food, as per usual. the lady that used to watch us as kiddos would make the eggs in a basket. luved 'em. wow. i'd not thought of those in years~

muley went pseudo pesco vegetarian, sigh.
You know darn well I would dump them all together in bowl with some pineapple chunks and some grapes. Love fruit salad but sure don't take time to make pretty designs.:clap::clap:
 
woe is me! half the reason i ingest food is aesthetics.:whistling: if 'da food ain't purrty, take it away! replace my meal.:hammer:
 
Purty is the honey oatmeal french toast baking in the oven right now. Might have to fry some BACON to go with it.:clap:
 
Too late for a pic. I skipped the bacon but the french toast was super. Had to eat in a hurry so I could work on beehives. Hope to get some honey this year if they have enough to survive the winter. The extra is mine.
