I cook mostly from scratch. However, I do cheat from time to time and use prepared foods.
I love this dish.
RECIPE
1/4 cup extra virgin olive oil.
1 Cup of white chicken meat cut small.
1 box of frozen, creamed spinach (thawed)
1 small can of sliced mushrooms ( or 6 fresh white ones)
1/4 cup diced onions.
1/4 cup of sliced celery
1/4 cup of diced green pepper (optional).
1 tsp of Oregano
1 tsp of Basil
1 tsp of Cilantro
1 12 oz box of Butterfly pasta.
the cheat;
one 15 oz jar of prepared Alfredo sauce.

Brown the chicken, mushrooms and onions in the olive oil.
You can add some butter if you like.
After the meat has browned, add the celery and green pepper and spices and simmer for about 15 minutes.
Add the spinach.
Add the prepared Alfredo sauce or make your own
Let simmer for 15 minutes whilst you boil and drain the pasta.
Mix the pasta and chicken/spinach sauce and stir well.
Top with grated parmesan cheese and some black pepper to taste.
I never add salt, but you may wish to do so.
Serve immediately.
Best served with a Chardanay or a dry semi sweet white wine.
BTW , for those who won't eat spinach, this recipe works with broccoli.
