Things to see/do in Alabama and FL panhandle?

We're planning a trip through Alabama and northern Florida.
Any recommendations?

Here is our tentative itinerary. It looks like mostly Interstate highways. Is it worth it to take the back roads for any/all of the trip (time permitting).
Fly into Destin FL
1 night in Birmingham
2 nights in Huntsville
2 nights somewhere along the beaches on the Gulf.

Much of this trip will be focused on military exhibits. The Mrs. isn't into it but I'll give her some beach time near the end. ;)
