USDA says Bison is an exotic meat, and is making it harder to sell, even though the USDA has supposedly made it easier for a smaller processing operation to cut and sell meats.
Bison are an indigenous, and commercially grown. They are not an endangered species in any way shape or form. Idiots in the USDA need to get a clue.
Must be Democrats who are "smarter" than the rest of us....

I have a friend, an old customer/client Skip Sayers who has a huge bison farm near Lebanon Missouri. Bison meat is really good stuff. low in fat and quite delicious.

Expensive? Yes, but makes great burgers.

Ozark land is sometimes unfit for cattle. Much like what this Video shows because it is rocky and dry. Irrigation makes it better for cattle but not so much for the environment as it reduces aquifers. Better to have grazing animals that can do well on the land and for the land. It's called "Good Husbandry."
