Man I used to love shredded beef sandwiches!
The simplest way I used to make them was to make a large roast , slow cooked.. then shred it with a fork and my fingers, then add a couple of cans of cream of onion soup and season it.
The recipes below are a little more time consuming.

Ingredients:
6 pounds top round roast, trimmed of fat
2 cans condensed beef broth
1 can (12 oz size) beer, light or dark
1 envelope dry onion soup mix
1 tablespoon minced garlic
Directions:
Place all ingredients into crock pot and turn on low for 8 - 10 hours. Remove roast from crock pot and shred, discarding any fat or strings. Return beef to crock pot. Serve on bakery buns with horseradish available. Excellent, And everyone loves it.
