Elk Stew question ??

If I let my Elk stew simmer all night in the crock pot , will it soften up the meat a little ? I am thinking I should have cut the meat into smaller pieces . I like it to fall apart on its own . Since this is my first try at making stew , I was just wondering . I love the flavor and it has just the right amount of heat :clap:, but I do not want it chewy:unsure: .

Make sure it is thawed before put into the crack pot, that will help. then 10-12 hrs on low it should fall apart. at least that is my way. The newer pots cook to hot for my taste find an old one they cook lower and slower...
