2 chicken breasts
10 oz can enchilada sauce
10 diced tomatoes with green chilies
28 oz can whole tomatoes
1-2 tablespoons cajun seasoning
fresh cracked black pepper
2 tablespoons minced purple/red onion
6-8 medium corn or flour tortillas
1 cup cheese - shredded (your choice, we used colby jack)
3 tablespoons salsa - hotness to your choice
2 cloves garlic
1/4 red onion diced
to cook the chicken:
bring some water to a simmer in a large sauce pot. add chicken,salsa,cajun seasoning,garlic and 1/4 cup red onions.
add 1/2 can of whole tomatoes and all of the juice.
bring to a boil, then turn down and simmer until chicken is cooked and shreddable.
meanwhile in another pot, add both tomatoes,enchilada sauce and bring to a boil. after about 5 minutes of boiling, bring down to a simmer and blend with an immersion blender until smooth. simmer for 5-10 minutes.
when chicken is done, shred in a bowl then add 6 oz of enchilada sauce,minced onion and set aside.
roll up chicken in enchiladas(Mrs.Bam is the roller, she has lots of experience rolling McDonalds breakfast burritos..lol)
top with enchilada sauce and cheese
bake at 350*F for about 25 minutes or until cheese is melted and bubbly.add a little more enchilada sauce when it comes out of the oven.
serve with a dollup of sour cream
