Farmhouse Spiced Raisin Gingerbread
This is a recipe based on one by Renny Darling
Makes 16 servings

Ingredients:
3/4 cup dark molasses
3/4 cup boiling water
1/2 cup yellow raisins
1/2 cup shortening
3/4 cup brown sugar
1 large egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking sida
1 teaspoon cinnamon
1 teaspoon grown ginger
1/4 teaspoon ground cloves

Directions:
Mix together the molasses and the boiling water until well blended. Add the raisins, shortening, sugar and egg and beat until blended. Combine the dry ingredients stirring until well mixed and then add them to the wet ingredients and stir until blended. Do not overmix.
Turn out the batter into a greased 8-inch square pan and bake at 350 degrees for about 45 minutes or until a toothpick inserted in the center comes out clean. Cut into squares and serve with cream cheese, sliced strawberrries and chopped toasted pecans, if desired.
