The long west trips are probably great.
We took a short, 200-250 miles, scenic train trip a few years ago. It was called Vermont snowtrain. it left Boston ran to western Mass then up through Vermont.
Sounds great EH! Well, what I didn't think about when I bought the tickets is, Where do trains run? on tracks. Where are most train tracks? near every dump, junkyard, slum and abandoned factory you can think of.
Scenic not really.
On the other hand I've seen tracks in the west while crossing the Rockies that must be spectacular.
