I've been playin' with this one over the last few months, and given the thread about a weight loss competition, this might a good recipe to try for that.

Canned goods are all 14 -- 16 oz. size.

1 can refritos (fat free, if you prefer)
1 can white sweet corn
1 can black beans
1 can great northern beans
1 can diced tomatoes with green chiles
1 can chicken broth (again, fat free if you prefer -- I also use low sodium)
.25 C barbecue sauce

Pour the above into a crock pot set to "high."

I like to liquify this next set of ingredients in my mini blender:

T. chili powder
T. cumin
T. oregano
2 -3 T. flour
Handful of fresh cilantro (just tear a handful off of the bunch)
Large garlic clove
2 jalapenos
1 medium onion
Add to crock pot.

1 lb. chicken breast. I almost always use frozen, skinless and boneless breasts. No need to thaw. Just wrap them in foil and bake at 400 deg. for 40 minutes. Open the foil, and pour some sauce or marinade over them (I like spicy buffalo sauce). Bake 'em for another 20 minutes, uncovered. Dice the chicken up, add it to the crock pot. I'll leave it on high and stir (and taste) from time to time until I go to bed, then switch the pot to low or warm and cook away for a good 8 hours.

Healthy bachelor cookin'! Lots of fiber and healthy protein.

A word of warning, however. Do NOT eat this stuff in the 24 hour period prior to the following events:

Church
Court appearances
Dates
Prostate exams
Marathons
Walk-a-thons
Tel-a-thons
Seances
Subway or bus rides
Long car rides with windows frozen shut
SCUBA diving
Sex
