Crock pot veggie soup

Durwood RIP

Gone But Not Forgotten
I put all the veggies in my crock pot for veggie soup.
My crockpot is 6 quarts


Ingredients are

All cans are around 15 ounces or so and I drain all the cans

2 cans Stewed tomatoes ( onions ,green peppers, and celery are in with the tomatoes)
2 cans green beans
2 cans sliced new potatoes
1 can corn
1 can peas
1 can lima beans or butter beans. I used lima this time
1 can of tomatoe juice (14 ounces or so)
1 can of sliced carrots
1 or 2 cans of water (14 ounces or so) depending how thick you want it.

I pepper it to taste in the crock pot.

I let cook on high for 5 hours then on low for another 4 or so.

It might taste better with frozen veggies instead of canned. Next time i might try it but it will at least double the cost of the ingredients to do that.

Here it is after i put everything in.

Perhaps he hates cleaning a crock pot, I know I do.

Yeppers it is. It is a Reynolds slowcooker liner as it is called. Four bags to a box and just pull them out and throw away when done. No muss, no fuss. They are in the isle with your sandwich bags and such.

Thanks for the update on the plastic liner. I'll have to try one as we do a lot of cooking with our crock pots.

add a ham hock, some onions and celery....Serve with a pan of cornbread.....MMMMmmmm good. The contents of that crock look delicious!

Wife and I made this soup today. We changed one thing: we browned about a pound of stew beef and added that to the soup. Let it cook as Durwood suggested and had it for dinner tonight. Had a couple of grilled cheese sandwiches to go with it.

Tomorrow I'll make some cornbread to go with the soup as CityGirl suggested.

That is a great soup recipe, and it is so easy.

Wife found some, but we forgot to use one. Remembered it after everything was in the crock pot.
