Awesome Potato Soup

8 cups of cubed golden potatoes
1/3 cup chopped onion
3 cans of chicken (or vegetable) broth
1 can of cream of chicken (or cream of onion) soup
1/4 teaspoon of pepper

Combine and simmer until potatoes are tender.

Stir in 8 oz block of cream cheese.

Add crumbled bacon (or fakey bacon like I do), chives, parsley and shredded cheddar.

This is very rich and such a nice recipe to have around on cold days. ;)

I love potato soup and this recipe sounds great. I only wish I could dip my bread in it. Man, I wish I was 25 years old again and not have to worry about this stuff.

Hey that potato soup was GOOOOOOOD!!! Everyone liked it, including company . I had to add a little southern touch to it and fry the bacon and onions together first then added it to the soup. You know us southerners gotta fry something.

Yep, it's the best recipe I've ever had for tater soup.. ;)

I made this soup about 2 months ago. Loved it. Now I am hungry for it again. Just making a 1/2 batch today for Mtntopper and I. I added 2 stalks of celerty to go in it too. And of course, home made bread to go with it. Good for a cold day. Thanks again PG for sharing this receipe.:clap:

I think I'll make it again on my next weekend off.. I make the whole recipe and freeze some for later.
It does freeze very well.:smile:
You mentioned homemade bread.. reminds me I haven't used my bread machine for a long time!:w00t::thumb:

Well, I made it and it was "good". But the little mixer arm in the bottom of my bread machine came off in the bread.:sad: Had a hard time getting it out.. The bread wasn't too bad. But It would've been better if it would've mixed up better. Oh well. It is still eatable. And thanks PG. I was wondering if I could freeze the rest of it.

oh great now I am REALLY craving potato soup.............all week I was wanting a hot bowl of it, now YOU come along and make my eyes water with want..............hehehehehhehhehe

My dad makes a similar recipe but he uses the chicken bouillon cubes instead of the broth. It makes it a little thicker. He also adds Velveeta cheese to it. It is so good!

I was thinking about making potato soup tonight actually. We are in the middle of freezing drizzle here in Oklahoma, so a nice warm soup sounds amazing!

Loralei, today is a yucky day in central NC. Overcast, drizzling rain, temps in the low 40s. In other words, a great day to try your recipe.

We didn't have cream of chicken or cream of onion soup, but did have cream of broccoli so substituted that instead.

Also, we didn't have bacon, but do have some frozen Honey Baked Ham. I'll chop that up into small pieces to use instead of the bacon.

All I can say is I wish I had started it earlier so we could have had it for lunch today. As it is, we'll have to wait until dinner tonight to really dig into it.

Great recipe even though I improvised a little bit.

Since I did not make the soup like your recipe called for, I can't compare mine to yours, but I can say mine was very good. Doubt it was any better than the original, but being able to use what was on hand rather having to run to the store was a big plus.

Plus, my wife really liked it. Guess that's what really matters.
